I made Homemade meatball calzones for lunch!
The crust was soo flaky and perfect for the decadent, tender, delicious meatballs stuffed inside that are topped with melted delicious mozzarella cheese! The stuffing was so moist with the tomato sauce and the homemade meatballs!
Soo delicious! I loved it. SO. MUCH.

Dinner: Salmon with asian glaze and green beans
Baked salmon, drizzled with a decadent asian sweet and salty glaze sauce, nested on a bed of rice with sauteed green beans.
Yum! Now here are the mouth watering details.
The salmon was sooo juicy and tender. Not overcooked. Slightly undercooked so it’s soft and moist. My first time at making an asian glaze sauce. I combined different types of ingredients and tasted as I went. Adding more of so and so and such. I looked at multiple asian glaze sauce recipes online, and they were all soo different! So I chose specific ones from different recipes and made my own! It was sweet and it balanced well with the salt from the soy sauce. The beans were sauteed in a garlic infused olive oil seasoned with salt and pepper. The rice was white rice. I drizzled the sweet and salty asian glaze over the fish and rice.
Best. Sauce. I have. Ever. Made. From. SCRATCH! Ahhhhhh! So proud, so proud.

Poached egg on buttered toast.
This was my first time trying to make a poached egg. I’ve always wanted to try, but really didn’t know how. I thought this was a good first attempt. But the yolk wasn’t as runny as I wanted it to be.But it tasted really good with the buttered toast.Smooshing the egg and having the yolk ooze out. Spreading the yolk all over the surface of the toast. Cutting the toast and having it soak up the yolk.Ahhhhhhhmazing.Making you hungry yet? :)You’re welcome! ;)

This was my first time trying to make a poached egg. I’ve always wanted to try, but really didn’t know how. I thought this was a good first attempt. But the yolk wasn’t as runny as I wanted it to be.
But it tasted really good with the buttered toast.
Smooshing the egg and having the yolk ooze out.
Spreading the yolk all over the surface of the toast.
Cutting the toast and having it soak up the yolk.
Ahhhhhhhmazing.

Dinner: Stir fry noodles & veggies & chicken with peanut satay

The noodles and vegetables and chicken were stir fried and then tossed with peanut satay sauce!
It was delicious and everything was tender and crisp. The peanut satay was a nice thick tasty sauce. It complemented the the stir fry very well!

Stir fry with noodles & veggies & chicken with peanut satay sauce

Ingredients

For the Stir fry-

  • 2 packages of ramen noodle
  • 1 cup of mixed vegetables (I used a frozen blend which included broccoli, carrots, peppers, snow peas, and onions)
  • 1 chicken breast, seasoned and chopped
  • 1/4 teaspoon salt
  • dash of black pepper
  • 1 teaspoon tumeric
  • dash of garlic powder
  • vegetable oil (to coat pan and fry)
  • 1/4 cup green onion, finely chopped, as a garnish (optional)

For the Peanut Satay Sauce-

  1. 3/4-1 cup creamy peanut butter
  2. 2 tablespoons soy sauce
  3. 1 tablespoon brown sugar
  4. 3-4 tablespoon water (depending on consistency of sauce you want)

Directions

  1. Chop chicken breast into small pieces, season with salt, pepper, tumeric, and garlic powder; set aside
  2. Boil water for noodles.
  3. While water is boiling, prepare peanut satay sauce. Mix all ingredients in sauce pan on low heat, stirring constantly. When all ingredients are incorporated, set aside.
  4. When water boils, add noodles and cook 2-3 minutes. Remove from heat and drain.
  5. Heat hot skillet or wok and add layer of oil, just enough to coat bottom of pan.
  6. When oil is hot, add chicken, saute 1-2 minutes until slightly cooked, then add in vegetables.
  7. Stir fry all together until vegetables are cooked and tender, and chicken is no longer pink.
  8. Add in noodles, and stir fry until nice crispy brown.
  9. Remove from heat and add in peanut satay. Toss until everything is nicely coated.
  10. Top with green onion and serve immediately.
